Low Carb Week- Chocolate Chip Cookies
Yes you can.
It truly is a good thing when you can enjoy your favorite comfort foods while on a diet.
This is a weekly staple in our house. Sometimes, we make giant cookies- as shown above. Other times, we will make small cute cookies. No matter what we are doing, it is lower carb than the usual chocolate chip cookies.

Splenda You can use a 50/50 mix of Splenda’s brown sugar and regular Splenda or just Splenda regular for baking.
1 1/2 cups of
(we use Sensato) Sugar-free Chocolate Chips
2 sticks of butter or one stick of butter and one cup of an alternative or peanut butter.
1 tablespoon of vanilla extract (or imitation)
How to do it:
Preheat your oven to 375. Prepare your pan(s) with non-stick of your choice.
Mix 2 1/2 cups of Carbquick with your (softened) butter and/or alternative/peanut butter. Use a fork and add your other ingredients. When your batter gets ‘mushy’ it is recommended that you use your hands for the final mixing. If your batter seems loose, or you prefer a thicker cookie, add a half cup more of Carbquick. You can use a mixer if you prefer however, we find that our hands are really our best tool for this.
Place your batter in your desired cookie method (for example:one large one like we have done above or small scoops etc) on your pan and bake for apprx 9-12 minutes.
We love to experiment with this recipe with peanut butter or other items. They are really delicious. Your carb count will vary depending on your ingredients.Tweet
