I had never heard of carrot soup until someone made some for me a few weeks ago.
It’s cold around here and soup is always a good idea for me. Because we enjoy a lot of soup, finding a variety of soups to try is essential.
I’ve always liked carrots. I am thrilled that my family enjoyed them too.
Easy Carrot Soup
Why shouldn’t we enjoy carrots more?
1 medium carrot is said to have nearly double the daily required Vitamin A in it. Carrots are also said to have some anti-oxidant properties.
Carrots do contain sugar naturally.
The average carrot has about 2.9 grams of sugar.
This is the only added sugar to this soup.
I usually have baby carrots around.
We love to snack on carrots. I also use them for baking cakes and muffins. I’m not the only one who enjoys carrots in my house. My dogs love getting carrots for treats.
What you will need for this recipe
You will need some ginger for this recipe.
Using ground ginger is fine. I use what is in my spice cabinet.
You will need some kind of a blender.
Here are some ideas. I use a Vitamix and/or immersion blender.
- 1 tablespoon Butter
- 1 tablespoon Extra virgin olive oil
- 1 medium chopped Onion
- 1 stalk chopped Celery
- 2 cloves chopped small Garlic
- 5 cups chopped Carrots
- 6 Chicken bullion cubes
- 6 cups Water
- 1/2 cup Greek Yogurt
- 1 tablespoon Ginger
- to taste Salt and pepper
- as desired Garnish- parsley
- 1 tablespoon or as needed Sugar alternative
