I’m not a huge bread person.
When it comes to sandwiches that is.
I can gobble up fresh bread right out of the oven, with a slathering of butter on top, in no time.
A fresh wheat roll with some homemade honey butter is a wonderful way to get a meal started.
But, when it comes to sandwiches, sometimes an open sandwich is better than a sandwich with the usual two slices of bread.
Case in point, my open face Gruyere grilled cheese and tomato sandwich.

There is the time in a food ‘appreciator’s’ life when you are ready to experience something wonderful beyond the basic.
When it comes to cheese, Gruyere is one of those times.
Gruyere cheese, aka Gruyère, is a hard yellow cheese, named after the town of Gruyères in Switzerland. Gruyere is a favorite for baking with. Gruyere has a sweet and salty taste that can also be a bit nutty.
Gruyere cheese is a bit more expensive than your regular cheese but, it isn’t necessarily beyond reach. I like to think of Gruyere cheese as a special treat. If you want to impress someone, serve them something with some Gruyere cheese in it.
How to make this
- 4 slices Bread- sour dough or similar
- as needed, can use mayo or butter Sandwich spread of your choice
- 2 medium sliced Roma or Tomatoes of your choice
- 8 slices, desired thickness, can combine with another cheese Gruyère Cheese
- As desired Seasonings- optional
