I am so excited to see all of the delicious strawberries popping up at the local grocery stores.
Seeing fresh strawberries remind me that it really is spring.
An Easy Strawberry Vinaigrette Salad
I love that a fruit, like a strawberry can be added to a salad.
I love to add strawberries in the dressing and in the salad itself. A strawberry inspired salad is the perfect lunch especially when I am entertaining my friends for lunch.
Strawberries are such a delicious treat!
We love that we can bake with strawberries, add them to smoothies, or simply eat them as they are.
There are so many ways to enjoy a strawberry as they are. We can slice strawberries and top a cake with them. We can enjoy them in our cereal. We can even add strawberries to a delicious salad.

Many experts say that strawberries are one of the healthiest foods that we can eat. Strawberries contain fiber and natural sugar. Strawberries also have a bit of Vitamin C.
This recipe is not sugar free.
While I try to stay as sugar free as possible, I do include fruit whenever I can. Fruit, such as strawberries, contain natural sugar. Limiting the amount of strawberries, or fruit, that I eat helps me in my daily diet. Many experts seem to say that strawberries are fine for those of us concerned about sugar in the blood as long as we enjoy them in moderation.
What is in your Spring Salad?
Have you seen those ‘Spring Salads’ at your local grocery store?
What makes them a ‘Spring Salad’ anyway? We equate these salads with spring as they contain a mix of baby lettuces alofn with other greens that add a bit of color. This is what reminds us of spring.
In your Spring Salad, you may want to include:
- ‘Baby lettuce’ such as romaine, red leaf, and butter
- Chard- red or green
As you can see, if you are not making a large salad to share for a number of people, opting for a pre-made bag of Spring Salad may be a better economic choice to make rather than purchasing a lot of different kinds of greens that can be costly in quantity.
Also in this salad:
I like to add a few sliced strawberries per serving and some halved walnuts- about three or four walnuts per serving.
For the Strawberry Vinaigrette:
You will need:
Frozen strawberries work best. If you are using bagged strawberries, be sure that there is nothing else added to the bag besides strawberries (ie-sugar or similar products)
- 8 ounces strawberries
- 2 tablespoons apple cider vinegar
- 2 tablespoons extra virgin olive oil
- 1 tablespoon sugar alternative – can use a honey or sugar free honey
- 1 tablespoon lemon juice
- Salt and Pepper and seasonings to taste
To make this, simply add all of your ingredients together in a blender and blend. Toss this in your salad and serve.
Store in a refrigerator and whisk together if not using this immediately. It should keep for a few days.
