To be able to add pumpkin to a breakfast favorite is kind of like getting an extra treat for breakfast.
Pumpkin pancakes are a favorite for both adults and kids alike. Being in the breakfast business, I can attest to the popularity of this favorite seasonal pancake.
What makes the pumpkin pancake different from any other fruit or vegetable pancake is that the pumpkin is actually part of the batter itself.
When we usually make some kind of a fun pancake, we simply make a basic pancake batter and the add a few bits of whatever we are adding before we scoop the batter onto the griddle.
Let’s face it, around the fall festive holidays, pumpkins are a lot of fun. We carve them, we eat them, and we decorate them too!
I love that there are so many different kinds of pumpkins grown every year.
I grew a few nice sized pumpkins in my garden over the summer. My favorite pumpkin matured in early September, making me the first pumpkin owner on the block. Of course, soon after Labor Day, pumpkins appeared all over the place. That is just part of the fun of pumpkins and the excitement of fall. Don’t you think?
There are two secret ingredients in a pumpkin pancake recipe.
Obviously, one of those ingredients is the pumpkin. The pumpkin that is used is a canned pumpkin puree. The other secret ingredient is pumpkin pie spice. It is the pumpkin pie spice that gives this that truly fall feeling in my opinion.
The cheat for this recipe is to use a pre-made baking mix.
You know, the kind that we all have sitting around in our cupboards somewhere. Don’t have a pre-made baking mix- no problem. Simply sub in this below where it says “baking mix” in the recipe.
- 2 cups of AP flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt.
- 2 1/3 Cups or next 4 ingredients Baking Mix
- 2 cups- (omit if using baking mix above) Flour All Purpose
- 2 teaspoons (omit if using baking mix above) Baking Powder
- 1 teaspoon (omit if using baking mix above) Baking Soda
- 1 teaspoon (omit if using baking mix above) Salt
- 2 1/2 tablespoon or equivalent Sugar or alternative
- 1 1/4 teaspoons Pumpkin Pie Spice
- 1/2 cup Pumpkin Puree
- 1 1/4 Milk-whole or your choice
- 3 Eggs
- 1/4 cup Butter (melted) or vegetable oil
- 1 teaspoon Vanilla Extract
Simply whisk these ingredients together in a separate bowl before adding them to the recipe.
