I can’t seem to get enough of pumpkin anything this time of the year.
And really, I am all about enjoying a bowl of soup as well.
How To Make Pumpkin Pie Soup
It can be refreshing to know that pumpkins are not just for desserts and carving.
While I am all for a good pumpkin dessert and a cute carve pumpkin, sometimes, I like to see what else we can do with a pumpkin.
People seem to love this time of the year.
We love celebrating the harvest, all of the pretty leaf colors, and the tasty foods that we eat this time of the year. Give me a warm bowl of soup after a day of raking the many leaves in my backyard and I am a happy person.
My mother-in-law loved to make hearty soups this time of the year.
She took great pride in making her soups from scratch. My mother-in-law would often spend hours in the kitchen making a homemade meal for the family. While the meal was amazing to eat, she rarely got to spend time with the family when we gathered.
That is why I am all for a cheat or two in a recipe.
It is so much easier for me to pull out a can of pumpkin puree to make a soup than to go through the tedious process of baking a pumpkin and then mashing it up to use in a recipe.Thank goodness for modern conveniences . Am I right?
What makes this a “pumpkin pie” soup rather than a ‘pumpkin’ soup?
The addition of certain spices that you may add to your pumpkin pie. If you are not wanting a ‘pie’ taste in a soup, simply omit the pie spices and you will still have one heck of a tasty soup to share.
Could you make this in a crock pot?
You could make some alterations to the recipe at the blender step. I have yet to make this in a crock pot but, if I were to I would either make it in advance and transfer it to a crock pot to keep warm or use an immersion blender. This could be the perfect pot-luck or tailgate soup which is why I bring it up.
